Tomato And Apple Soup (dairy Free Gluten Free)

Ingredients
- 4 ounces onions, finely chopped
- 2 ounces earth balance margarine or 2 ounces butter
- 6 ounces fresh tomatoes, chopped
- 6 ounces apples, chopped peeled and cored
- 1/4 pint red wine
- 1/4 teaspoon dried thyme
- 1/4-1/2 teaspoon garlic powder
- salt
- 1/4 teaspoon fresh ground black pepper
- 1 pint vegetable stock or 1 pint chicken stock
Recipe
- 1 core the tomatoes and slice a shallow x in the opposite end.
- 2 place the tomatoes in boiling water for 2-3 minutes then in cold water. the skins will peel off easily.
- 3 cut up the tomatoes. peel and cut up the onions and apples.
- 4 place all ingredients in a stock pot, bring to the boil and simmer for 20 minutes until the onions are soft.
- 5 puree the mixture and then sieve to remove the tomato pips. the soup should be completely smooth. serve hot garnished with chives and cream, if desired, or chilled.
