Williamsburg Pumpkin Soup

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • 1/4 cup finely chopped onion
  • 4 tablespoons butter
  • 1 (8 ounce) can cream of chicken soup or 1 (8 ounce) can cream of mushroom soup
  • 1 cup canned pumpkin
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 dash pepper
  • 1 (8 ounce) can water (use soup can)

Recipe

  • 1 in saucepan, cook onions in butter until tender.
  • 2 stir in soup, pumpkin, and seasonings.
  • 3 gradually add water.
  • 4 heat; stir occasionally.
  • 5 garnish with parsley.
