Wilma's Chilled Zucchini Soup

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 2 lbs zucchini
  • 4 leeks
  • 1 onion
  • 1 large garlic clove
  • 1/4 cup butter
  • 1 tablespoon curry powder
  • 2 cups chicken broth
  • 4 cups buttermilk
  • cilantro

Recipe

  • 1 chop the zucchini, leeks, onion and garlic and cook in a large sauce pan with the butter until the onions are clear.
  • 2 add curry powder and salt and pepper to taste. cook 5 more minutes.
  • 3 puree veggies in blender with chicken broth. allow to cool.
  • 4 after cooled, add buttermilk. refrigerate.
  • 5 serve cold and garnish with cilantro.
