Ingredients
- 1 large onion
- 2 large sweet potatoes
- 3 cups water
- 2 teaspoons salt
- 1/2-1 lb spinach
- 3 tablespoons minced garlic
- 1 1/2 cups hot soymilk (i prefer nonfat vanilla)
Recipe
- 1 chop onion and potatoes, boil in water and salt until tender.
- 2 stir in spinach and garlic.
- 3 puree, return to pot.
- 4 stir in hot soy milk.
