Seasoned Roast Vegetables

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 kg mixed vegetables, chopped into chunks (potatoes, onions, carrots, capsicums etc)
  • 1 (70 g) packet dry soup mix (choose your favourite flavour)
  • 2 cups water
  • 2 tablespoons olive oil

Recipe

  • 1 place vegetables in a pan.
  • 2 combine soup mix & water and pour over vegetables, add olive oil.
  • 3 stir vegetables to get an even coating.
  • 4 bake at 180.c for approx 2 hours or until vegetables are tender.
  • 5 check and stir the veggies every half hour or so to avoid them sticking and add more water if necessary.
