Turkey Soup

Total Time: 7 hrs Preparation Time: 7 hrs

Ingredients

  • Servings: 8
  • 1 turkey carcass
  • 4 teaspoons salt
  • 1 cup carrot, grated
  • 2 chicken bouillon cubes
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 28 ounces tomatoes, chopped
  • 4 tablespoons pot barley
  • 1/4 cup lentils
  • 2 tablespoons rice
  • 1/4 cup parsley
  • 3 cups turkey, chopped

Recipe

  • 1 place carcass and salt in large pot.
  • 2 cover with 18 cups of cold water.
  • 3 simmer 5 hours.
  • 4 strain and discard bones.
  • 5 refrigerate both overnight.
  • 6 skim fat off.
  • 7 add remaining ingredients.
  • 8 simmer 2 to 3 hours.
