Turkey Soup

Ingredients

- 1 turkey carcass
- 4 teaspoons salt
- 1 cup carrot, grated
- 2 chicken bouillon cubes
- 1 cup celery, chopped
- 1 cup onion, chopped
- 28 ounces tomatoes, chopped
- 4 tablespoons pot barley
- 1/4 cup lentils
- 2 tablespoons rice
- 1/4 cup parsley
- 3 cups turkey, chopped
Recipe
- 1 place carcass and salt in large pot.
- 2 cover with 18 cups of cold water.
- 3 simmer 5 hours.
- 4 strain and discard bones.
- 5 refrigerate both overnight.
- 6 skim fat off.
- 7 add remaining ingredients.
- 8 simmer 2 to 3 hours.
