Tomato & Red Pepper Soup

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 800 g canned tomatoes
  • 2 red peppers, deseeded & sliced
  • 250 ml chicken stock
  • double cream (optional)

Recipe

  • 1 firstly, saute the onion & garlic & then add the tinned tomatoes & red peppers.
  • 2 bring to the simmer & add the stock. bring to the boil & then gently simmer for 5 mins, before blending into a smooth soup. season, add a swirl of cream before serving.
