Tomato & Red Pepper Soup

Ingredients

- 1 onion, chopped
- 2 garlic cloves, chopped
- 800 g canned tomatoes
- 2 red peppers, deseeded & sliced
- 250 ml chicken stock
- double cream (optional)
Recipe
- 1 firstly, saute the onion & garlic & then add the tinned tomatoes & red peppers.
- 2 bring to the simmer & add the stock. bring to the boil & then gently simmer for 5 mins, before blending into a smooth soup. season, add a swirl of cream before serving.
