Succotash Chowder

Ingredients

- 1 large onion, chopped
- 3 tablespoons butter
- 1 cup corn (fresh or canned)
- 1 cup lima beans (fresh or canned)
- 2 cups diced potatoes
- 1 cup water
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups milk
- 2 tablespoons flour
- 1/4 cup water
- 1 teaspoon parsley, chopped
Recipe
- 1 sauce onion and butter until slightly browned.
- 2 add the vegetables.
- 3 add 1 cup water, salt and pepper.
- 4 simmer til vegetables are tender.
- 5 add milk and heat to boiling.
- 6 blend flour with 1/4 cup water to make a smooth paste and add to the soup, cook for one minute while stirring constantly.
- 7 garnish servings with chopped parsley.
