Succotash Chowder

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 large onion, chopped
  • 3 tablespoons butter
  • 1 cup corn (fresh or canned)
  • 1 cup lima beans (fresh or canned)
  • 2 cups diced potatoes
  • 1 cup water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups milk
  • 2 tablespoons flour
  • 1/4 cup water
  • 1 teaspoon parsley, chopped

Recipe

  • 1 sauce onion and butter until slightly browned.
  • 2 add the vegetables.
  • 3 add 1 cup water, salt and pepper.
  • 4 simmer til vegetables are tender.
  • 5 add milk and heat to boiling.
  • 6 blend flour with 1/4 cup water to make a smooth paste and add to the soup, cook for one minute while stirring constantly.
  • 7 garnish servings with chopped parsley.
