Southwest Bean Soup

Total Time: 2 hrs 45 mins Preparation Time: 15 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 6
  • 1 (15 1/2 ounce) can kidney beans
  • 1 (15 1/2 ounce) can black beans
  • 1 (4 ounce) can green chilies, chopped
  • 1 (16 ounce) can corn
  • 1/2 onion, chopped
  • 2 carrots, chopped
  • 3 chicken bouillon cubes
  • 1/2 teaspoon chili powder
  • 1 dash cayenne pepper
  • salt and pepper
  • water

Recipe

  • 1 saute onion and carrots until tender.
  • 2 in a large pot, add all ingredients including carrots and onion.
  • 3 add water to barely cover ingredients.
  • 4 bring to boil; reduce heat to warm. cook for two hours.
  • 5 serve with corn bread!
