Spinach Torttellini Soup

Ingredients
- 3/4 cup chopped onion
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 2 (14 1/2 ounce) cans reduced-sodium chicken broth
- 2 cups water
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 (9 ounce) package refrigerated cheese tortellini
- 1 (14 1/2 ounce) can diced tomatoes, undrained
Recipe
- 1 in a large saucepan, saute onion, and garlic in oil until tender.
- 2 add the broth, water, sugar, salt, and pepper, and bring to a boil.
- 3 add tortellini, cook 7-9 minutes or unttil tender, stirring occasionally.
- 4 reduce heat, stir in tomatoes, and spinach, and heat through.
- 5 just before serving, sprinkle with parmesan cheese.
