Spinach Torttellini Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 3/4 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 2 (14 1/2 ounce) cans reduced-sodium chicken broth
  • 2 cups water
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1 (14 1/2 ounce) can diced tomatoes, undrained

Recipe

  • 1 in a large saucepan, saute onion, and garlic in oil until tender.
  • 2 add the broth, water, sugar, salt, and pepper, and bring to a boil.
  • 3 add tortellini, cook 7-9 minutes or unttil tender, stirring occasionally.
  • 4 reduce heat, stir in tomatoes, and spinach, and heat through.
  • 5 just before serving, sprinkle with parmesan cheese.
