Thick Spinach Soup

Ingredients
- Servings: 4
- 1 tablespoon oil
- 1 ounce butter
- 1 onion, chopped
- 2 potatoes, diced
- 1 lb spinach, chopped
- 1 1/2 pints vegetable stock or 1 1/2 pints chicken stock
- 1/2 teaspoon grated nutmeg
- salt
- fresh ground black pepper
- creme fraiche or cream
Recipe
- 1 heat the oil and butter in a large saucepan and gently cook the onion for 3 minutes until softened.
- 2 stir in the potatoes, spinach, stock, nutmeg and seasoning.
- 3 bring to the boil and simmer for 15 minutes.
- 4 transfer to a food processor (or use a hand-blender) and blend until smooth.
- 5 return to the pan, heat through and adjust seasoning to taste.
- 6 ladle into soup bowls and garnish with a swirl of creme fraiche (or cream) and freshly ground black pepper.
- 7 enjoy!
