Thick Spinach Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon oil
  • 1 ounce butter
  • 1 onion, chopped
  • 2 potatoes, diced
  • 1 lb spinach, chopped
  • 1 1/2 pints vegetable stock or 1 1/2 pints chicken stock
  • 1/2 teaspoon grated nutmeg
  • salt
  • fresh ground black pepper
  • creme fraiche or cream

Recipe

  • 1 heat the oil and butter in a large saucepan and gently cook the onion for 3 minutes until softened.
  • 2 stir in the potatoes, spinach, stock, nutmeg and seasoning.
  • 3 bring to the boil and simmer for 15 minutes.
  • 4 transfer to a food processor (or use a hand-blender) and blend until smooth.
  • 5 return to the pan, heat through and adjust seasoning to taste.
  • 6 ladle into soup bowls and garnish with a swirl of creme fraiche (or cream) and freshly ground black pepper.
  • 7 enjoy!
