Spinach Souffle Lite

Ingredients
- 1 lb frozen chopped spinach
- 24 ounces low fat cottage cheese
- 2 eggs
- 2 tablespoons bacon bits
- 1 can condensed fat-free cream of mushroom soup
- 1/4 teaspoon pepper
- parmesan cheese (optional)
- breadcrumbs (optional)
Recipe
- 1 heat oven to 350°f.
- 2 thaw spinach and squeeze out water.
- 3 beat eggs and mix in the condensed soup.
- 4 combine all ingredients in a bowl and fold until incorporated.
- 5 liberally grease a baking dish, you really don't want to try to clean this out of an untreated dish.
- 6 divide into 4 large ramekins for entree portions, 8 or more smaller dishes for side dishes, or into one casserole dish.
- 7 if using parmesan cheese or bread crumbs (or both), sprinkle them on top.
- 8 cook at 350 for 30 minutes or until top is bubbly.
