Spinach Souffle Lite

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 lb frozen chopped spinach
  • 24 ounces low fat cottage cheese
  • 2 eggs
  • 2 tablespoons bacon bits
  • 1 can condensed fat-free cream of mushroom soup
  • 1/4 teaspoon pepper
  • parmesan cheese (optional)
  • breadcrumbs (optional)

Recipe

  • 1 heat oven to 350°f.
  • 2 thaw spinach and squeeze out water.
  • 3 beat eggs and mix in the condensed soup.
  • 4 combine all ingredients in a bowl and fold until incorporated.
  • 5 liberally grease a baking dish, you really don't want to try to clean this out of an untreated dish.
  • 6 divide into 4 large ramekins for entree portions, 8 or more smaller dishes for side dishes, or into one casserole dish.
  • 7 if using parmesan cheese or bread crumbs (or both), sprinkle them on top.
  • 8 cook at 350 for 30 minutes or until top is bubbly.
