Sweet Garlic Soup

Ingredients

- 6 slices bread
- 2 tablespoons butter
- 3 -4 whole heads garlic
- salt
- fresh ground pepper
- 3 1/2 cups chicken stock
- 6 egg yolks (optional)
- 1 1/4 cups creme fraiche or 1 1/4 cups heavy cream
Recipe
- 1 start cooking about 35 min before serving.
- 2 trim off the crusts from the bread slices & set aside.
- 3 separate and peel garlic cloves.
- 4 half-fill a large sauce pan with water, add garlic and bring to a boil.
- 5 pour off water. refill pan with water and return to a boil.
- 6 pour off the water.
- 7 add chicken stock to pan and simmer over low heat until the garlic begins to soften, about 7-8 minute
- 8 note: cooking may be stopped here when preparing in advance.
- 9 when ready to finish, return stock and garlic to a simmer. add bread slices and bring to a boil.
- 10 stir in the creme fraiche and return to a boil.
- 11 pour soup into a food processor or blender, add butter, season with salt and pepper and process until smooth.
- 12 pour into individual soup bowls and add a fresh egg yolk to each just before serving.
