- 1/2 lb assorted cut-up vegetables (such as red peppers, zucchini, yellow squash, carrots, celery, mushrooms, etc.)
- 1 envelope lipton onion soup mix
- 2 tablespoons extra virgin olive oil
Recipe
- 1 preheat oven to 450f degrees.
- 2 in a plastic bowl toss all ingredients until coated.
- 3 empty into a 9x13 roasting pan.
- 4 bake, stirring once, for 20 minutes or until tender.
