Sb Diet Phase 1 Spicy Chickpea And Onion Soup

Ingredients
- Servings: 4
- 2 red onions, sliced finely
- 2 garlic cloves, minced
- 1 teaspoon harissa (use (to taste)
- 2 (14 1/2 ounce) cans canned chick-peas, drained
- 14 1/2 ounces canned diced tomatoes
- handful arugula leaf
- handful baby spinach leaves
- salt & freshly ground black pepper, to taste
Recipe
- 1 heat some olive oil and a knob of butter in a saucepan over a low heat and once the butter has melted add the onions and garlic- stir and then gently sautee for a good 20 minutes or until the onions have softened and become golden.
- 2 stir in harissa and cook for a further 5 minutes.
- 3 add the tomatos and continue to simmer on a low heat for a further 10 minutes to allow the flavor to intensify.
- 4 stir in chickpeas and enough water or vegetable stock to cover the mixture. simmer for 15 minutes- the chickpeas are already cooked so all you are doing is getting them up to temperature and absorbing the flavors.
- 5 toss in a couple handfuls of arugula and baby spinach leaves- stir and then taste, adjust the seasoning with salt and pepper as desired.
- 6 the soup is now ready to serve.
