Shortcut Tomato Bisque

Ingredients

  • Servings: 2
  • 1 (10 3/4 ounce) can condensed tomato soup
  • 1 (14 1/2 ounce) can diced tomatoes, with juices
  • 1 cup half-and-half
  • grated cheese (optional)
  • ground black pepper (optional)

Recipe

  • 1 combine soup, tomatoes (including juice) and half and half in a pot over medium heat.
  • 2 cook until simmering (or to desired temperature) but not boiling, stirring frequently.
  • 3 if using, put a handful of grated cheese (sharp cheddar is nice) in the bowls and ladle soup over it, or sprinkle with parmesan and pepper.
