Ingredients

- 1 large chopped onion
- 1 large chopped carrot
- 1 celery rib, chopped
- 1/4 cup butter or 1/4 cup margarine
- 1/2 cup all-purpose flour
- 8 cups chicken broth
- 3 cups cooked wild rice (2 cups uncooked)
- 1 cup cubed cooked chicken breast
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup fat-free evaporated milk
- 1/4 cup snipped chives
Recipe
- 1 in a large saucepan, saute the onion, carrot and celery in butter until tender.
- 2 stir in flour slowly and blend.
- 3 gradually add broth.
- 4 next, stir in chicken, rice, salt and pepper.
- 5 bring to a boil over med. heat; cook and stir for 2 minutes or until thickened.
- 6 lastly, blend in milk and cook for 3 to 5 minutes longer.
- 7 garnish with fresh diced chives.
