Spinach Bean Soup With Red Potatoes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 4 cups vegetable broth
  • 2 cups water
  • 10 ounces spinach, chopped
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 garlic clove
  • 1 lb red potatoes, diced
  • 1 (14 1/2 ounce) can great northern beans

Recipe

  • 1 in a large stock pot, bring broth and water to a boil. add the tomatoes and potatoes and garlic, and return to a simmer. cover and cook until potatoes are tender, 10 to 15 minutes. stir in beans and spinach until heated through and spinach is wilted, about 2 minutes. season with pepper to taste.
