Spinach Bean Soup With Red Potatoes

Ingredients
- 4 cups vegetable broth
- 2 cups water
- 10 ounces spinach, chopped
- 1 (14 1/2 ounce) can diced tomatoes
- 1 garlic clove
- 1 lb red potatoes, diced
- 1 (14 1/2 ounce) can great northern beans
Recipe
- 1 in a large stock pot, bring broth and water to a boil. add the tomatoes and potatoes and garlic, and return to a simmer. cover and cook until potatoes are tender, 10 to 15 minutes. stir in beans and spinach until heated through and spinach is wilted, about 2 minutes. season with pepper to taste.
