Tomato Puree

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 1 quart tomato, cooked
  • 2 slices onions
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 4 cups whole milk

Recipe

  • 1 cook tomatoes and onion together for 5 minutes; rub through a sieve fine enough to remove seeds.
  • 2 heat to boiling point again.
  • 3 melt butter in another saucepan; blend in flour, salt and pepper.
  • 4 add milk gradually, stirring constantly.
  • 5 heat to boiling point and cook for three minutes.
  • 6 just before serving, add hot tomato mixture to hot sauce, stirring constantly.
  • 7 adjust seasonings and serve at once with crisp crackers or melba toast.
