Turnip Soup

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 10
  • 2 cups turnips, sliced
  • 1 cup potato, sliced
  • 1 small onion, sliced
  • 3 tablespoons butter
  • 1 1/2 tablespoons flour
  • 3 cups chicken stock
  • 1 cup milk
  • parsley (optional)
  • bacon, crumpled (optional)
  • crouton (optional)

Recipe

  • 1 place turnips, potatoes, and onions in saucepan.
  • 2 cover with small amount of water and simmer until tender; drain.
  • 3 mash with potato masher.
  • 4 add butter.
  • 5 mix flour with 1/4 cup milk.
  • 6 add to mixture and blend well.
  • 7 add chicken stock.
  • 8 mix thoroughly.
  • 9 return to heat and bring to a boil.
  • 10 remove from heat and add remaining 3/4 cup milk.
  • 11 reheat to serving temperature taking care not to boil.
  • 12 garnish with your choice of parsley, bacon or croutons.
