Tomato Orange Soup

Ingredients

  • Servings: 4
  • 3 tablespoons unsalted butter
  • 1/2 medium onion, diced
  • 2 (14 1/2 ounce) cans unsalted diced tomatoes with juice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon dried thyme
  • 1 cup fresh orange juice
  • 1/2 cup fat-free evaporated milk

Recipe

  • 1 in a saucepan, melt butter; add onion and sauté until translucent.
  • 2 add tomatoes, salt, pepper, baking soda, and thyme.
