Spicy Turkey And Corn Chili

Ingredients

  • Servings: 6
  • 2 tablespoons vegetable oil
  • 1 1/2 lbs ground turkey
  • 2 medium onions, chopped
  • 1 medium green bell pepper, chopped
  • 3 tablespoons chili powder
  • 2 teaspoons dried oregano
  • 1 (16 ounce) package frozen corn
  • 2 (15 ounce) cans mexican-style stewed tomatoes
  • 2 (16 ounce) cans kidney beans, drained and rinsed
  • 1 (14 ounce) can chicken broth
  • salt and pepper

Recipe

  • 1 in a large casserole, heat oil. add turkey, onions and green pepper and cook over medium high heat, stirring often, until meat is no longer pink, about 4 minutes.
  • 2 add chili powder and oregano and cook for 1 minute.
  • 3 add corn, tomatoes, beans, chicken broth, 1 ½ cups water and salt and pepper.
  • 4 bring to a boil over high heat, reduce heat to medium, and cook, uncovered, stirring occasionally until chili thickens slightly, 8-10 minutes.
