Ingredients

- 1 tablespoon olive oil
- 1 shallot, minced
- 8 cups chicken broth
- 1 zucchini, halved lengthwise and sliced
- 4 ounces mushrooms, sliced
- 2 tomatoes, diced
- 1 cup ham, finely diced
- 1 1/2 cups cooked chicken, diced
- thyme, a pinch
- salt
- pepper
Recipe
- 1 in a soup pot, heat olive oil over med-high heat.
- 2 add shallot; saute 3 minutes.
- 3 add broth, zucchini, mushrooms, and tomatoes; bring mixture to a boil.
- 4 decrease heat to medium; simmer 15 minutes.
- 5 stir in ham, chicken, thyme, salt, and pepper to taste; continue to simmer 5 minutes.
- 6 remove from heat and let stand briefly before serving.
