Savorie’s Tomato Bisque Soup

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3/4 cup onion, chopped
  • 1/3 cup butter
  • 3/4 teaspoon dill seed
  • 1 teaspoon dill weed
  • 1 teaspoon oregano
  • 1/4 cup honey
  • 1/4 cup flour
  • 1 (28 ounce) can diced tomatoes
  • 3 cups chicken stock
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 cup fresh parsley, chopped
  • 2 cups half-and-half cream

Recipe

  • 1 sauté onion, dills, oregano in butter.
  • 2 add flour, cook roux.
  • 3 add tomatoes and (juice to equal stock amount) and stock.
  • 4 salt & pepper.
  • 5 bring to low boil.
  • 6 reduce & simmer.
  • 7 cook long enough to get rid of flour taste.
  • 8 before serving, warm up the half & half and slowly add to hot mixture along with parsley and honey, low simmer (so it does not break to boil) and serve.
