Slower Cooker Potato Soup

Total Time: 8 hrs 25 mins Preparation Time: 25 mins Cook Time: 8 hrs

Ingredients

  • Servings: 8
  • 6 cups cubed potatoes (we leave peelings on but feel free to peel)
  • 5 cups water
  • 2 cups chopped onions
  • 1 stalk celery, chopped (about 1/2 cup)
  • 1 carrot, thinly sliced
  • 1/4 cup butter
  • 5 chicken bouillon cubes
  • 1 teaspoon fresh ground pepper
  • 1/4 teaspoon ground cumin (feel free to use more or less)
  • 1/4 teaspoon cayenne pepper (feel free to use more or less)
  • 1 teaspoon minced bottled garlic
  • 1 (12 ounce) can evaporated milk
  • 3 tablespoons fresh parsley, chopped

Recipe

  • 1 spray large slow cooker with cooking spray.
  • 2 in slow cooker, combine all ingredients except evaporated milk and parsley.
  • 3 cover and cook on high for 2 hours and then turn on low for 5 hours.
  • 4 add milk and parsley. mix well. cover and cook additional 30 to 60 minutes longer.
