Ttj's Special Spicy Stew #1

Ingredients

- 4 medium tomatoes, skinless (fresh is always best, but frozen tomatos will work.)
- 1/2 cup finely chopped bell pepper
- 2/3 cup water
- 1 tablespoon vegetable-based butter substitute (i used "i can't believe it's not butter".)
- 2 garlic cloves
- 1/2 teaspoon dried chives
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon ginger (i would've used fresh ginger, but someone threw my ginger root out! i had to settle for ground ginge)
Recipe
- 1 saute peppers and garlic (if you choose to chop or mince the garlic, it's up to you. i cooked mine whole.) in butter or vegetable spread until tender and remove from heat. place tomatos, peppers, garlic, and seasonings in a pot with boiling water and cook on medium heat, stirring occasionally, for between 10 and 20 minutes or until the tomatos have turned to separated mush. let the soup simmer (covered) for 10-15 minutes. (feel free to stir occasionally during the simmering period. ).
- 2 once your soup is done simmering, it is ready to enjoy!
