Smoked Country Bacon And Potato Chowder

Ingredients

- 8 slices smoked country bacon
- 1 cup yellow onion, chopped
- 3 cups raw potatoes, diced
- 2 2/3 cups chicken stock
- 1 chicken bouillon cube
- 1 tablespoon flour
- 1 cup heavy cream
- salt and pepper
Recipe
- 1 cut bacon into 1/2 inch pieces; cook in a large saucepan until crisp. reserve bacon and 2 tablespoons of fat.
- 2 sauté onion in fat until translucent; add potato, chicken stock and bouillon. bring to a boil and reduce heat, simmering until thick. add flour to cream and mix thoroughly, then add to chicken stock mixture. add bacon salt and pepper, and heat to serving temperature.
