Smoked Country Bacon And Potato Chowder

Ingredients

  • Servings: 4
  • 8 slices smoked country bacon
  • 1 cup yellow onion, chopped
  • 3 cups raw potatoes, diced
  • 2 2/3 cups chicken stock
  • 1 chicken bouillon cube
  • 1 tablespoon flour
  • 1 cup heavy cream
  • salt and pepper

Recipe

  • 1 cut bacon into 1/2 inch pieces; cook in a large saucepan until crisp. reserve bacon and 2 tablespoons of fat.
  • 2 sauté onion in fat until translucent; add potato, chicken stock and bouillon. bring to a boil and reduce heat, simmering until thick. add flour to cream and mix thoroughly, then add to chicken stock mixture. add bacon salt and pepper, and heat to serving temperature.
