Turkey Soup

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • 1 1/2 tablespoons oil
  • 1 cup vidal onion, diced
  • 1 cup carrot, diced
  • 1 cup celery, diced
  • 2 tablespoons italian seasoning (or substitute for savory or poultry seasoning)
  • 1 teaspoon sage, dried
  • 3/4 cup wild rain rice
  • 1 lb turkey, cooked, diced
  • 8 cups low sodium chicken broth
  • 1/2 cup frozen peas
  • 1/2 cup diced plum tomato (optional)
  • 2 tablespoons lemon juice

Recipe

  • 1 heat olive oil in large pot to medium-high heat. add the onions, carrots and celery to pot and cook until tender.
  • 2 add the italian seasoning, sage, rice blend and turkey. stir and cook for a minute.
  • 3 add chicken broth and bring to a boil then turn down and simmer for 20 minutes to low heat.
  • 4 add peas, tomatoes and lemon juice and cook for another 10 to 20 minutes.
