Turkey Soup

Ingredients
- 1 1/2 tablespoons oil
- 1 cup vidal onion, diced
- 1 cup carrot, diced
- 1 cup celery, diced
- 2 tablespoons italian seasoning (or substitute for savory or poultry seasoning)
- 1 teaspoon sage, dried
- 3/4 cup wild rain rice
- 1 lb turkey, cooked, diced
- 8 cups low sodium chicken broth
- 1/2 cup frozen peas
- 1/2 cup diced plum tomato (optional)
- 2 tablespoons lemon juice
Recipe
- 1 heat olive oil in large pot to medium-high heat. add the onions, carrots and celery to pot and cook until tender.
- 2 add the italian seasoning, sage, rice blend and turkey. stir and cook for a minute.
- 3 add chicken broth and bring to a boil then turn down and simmer for 20 minutes to low heat.
- 4 add peas, tomatoes and lemon juice and cook for another 10 to 20 minutes.
