Spinach And Garbanzo Bean Soup

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 slices bacon, chopped
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/8 teaspoon ground allspice
  • 1 (14 ounce) can chopped tomatoes
  • 1 (14 ounce) can chicken broth
  • 1 (15 ounce) can garbanzo beans, rinsed and drained
  • 1 lb fresh spinach, washed and chopped
  • 4 scallions, chopped
  • 1 tablespoon worcestershire sauce
  • 1/4 teaspoon pepper

Recipe

  • 1 in a large saucepan, cook bacon, onion and garlic over medium heat, stirring occasionally, until bacon renders its fat and onion begins to brown, 5 minutes.
  • 2 add cumin and allspice, and cook, stirring, 1 minute.
  • 3 add tomatoes and chicken broth, cook 5 minutes.
  • 4 add garbanzo beans, spinach, scallions, worchestershire, and pepper. bring to a boil.
  • 5 reduce heat to low, cover and cook, 30 minutes.
