Wild Mushroom Bisque

Ingredients

  • Servings: 3
  • 2 tablespoons butter or 2 tablespoons vegetable oil
  • 3 ounces shiitake mushrooms, chopped
  • 2 tablespoons minced shallots
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 1 (14 ounce) can beef broth
  • 1 cup half-and-half
  • 2 tablespoons sherry wine
  • 1/8 teaspoon fresh ground pepper

Recipe

  • 1 in a large saucepan, melt butter. add mushrooms and shallots and cook over medium heat, stirring frequently until softened, about 5 minutes.
  • 2 raise heat to high and whisk in condensed mushroom soup, beef broth, and half and half.
  • 3 bring to a boil, reduce heat to medium low, and simmer uncovered for 5 minutes.
  • 4 just before serving, stir in sherry and season with pepper.
