Wild Mushroom Bisque

Ingredients

- 2 tablespoons butter or 2 tablespoons vegetable oil
- 3 ounces shiitake mushrooms, chopped
- 2 tablespoons minced shallots
- 1 (10 ounce) can condensed cream of mushroom soup
- 1 (14 ounce) can beef broth
- 1 cup half-and-half
- 2 tablespoons sherry wine
- 1/8 teaspoon fresh ground pepper
Recipe
- 1 in a large saucepan, melt butter. add mushrooms and shallots and cook over medium heat, stirring frequently until softened, about 5 minutes.
- 2 raise heat to high and whisk in condensed mushroom soup, beef broth, and half and half.
- 3 bring to a boil, reduce heat to medium low, and simmer uncovered for 5 minutes.
- 4 just before serving, stir in sherry and season with pepper.
