Wild Rice Soup

Ingredients

- 4 cups chicken broth
- 1/3 cup uncooked wild rice
- 1/3 cup margarine
- 1/2 cup celery
- 1/4 cup chopped green pepper
- 1/4 cup chopped onion
- 1 carrot, shredded
- 1 teaspoon minced garlic
- 1/4 cup flour
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon chopped pimiento
- 3/4 cup half-and-half
- 2 tablespoons dry sherry
- 3/4 cup shredded cheese
Recipe
- 1 rinse rice in cold water and drain.
- 2 combine rice and chicken broth in 2 quart saucepan.
- 3 cover and cook until tender (40 to 50 minutes).
- 4 in another saucepan melt margarine and add celery, green pepper, onion, carrot and garlic.
- 5 cook until vegetables are tender (stirring occasionally) about 10 minutes.
- 6 add flour and cook another 2 minutes.
- 7 add broth, rice, salt, pepper, and pimentos and cheese.
- 8 bring to boil, stirring often.
- 9 stir in half and half and sherry.
- 10 heat through.
