Wild Rice Soup

Ingredients

  • Servings: 6
  • 4 cups chicken broth
  • 1/3 cup uncooked wild rice
  • 1/3 cup margarine
  • 1/2 cup celery
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1 carrot, shredded
  • 1 teaspoon minced garlic
  • 1/4 cup flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon chopped pimiento
  • 3/4 cup half-and-half
  • 2 tablespoons dry sherry
  • 3/4 cup shredded cheese

Recipe

  • 1 rinse rice in cold water and drain.
  • 2 combine rice and chicken broth in 2 quart saucepan.
  • 3 cover and cook until tender (40 to 50 minutes).
  • 4 in another saucepan melt margarine and add celery, green pepper, onion, carrot and garlic.
  • 5 cook until vegetables are tender (stirring occasionally) about 10 minutes.
  • 6 add flour and cook another 2 minutes.
  • 7 add broth, rice, salt, pepper, and pimentos and cheese.
  • 8 bring to boil, stirring often.
  • 9 stir in half and half and sherry.
  • 10 heat through.
