Sweet Corn Soup

Ingredients
- Servings: 4
- 4 ears sweet corn, kernels cut off cobs
- 8 ounces bacon, diced
- 2 large yellow onions, chopped
- 3 garlic cloves, minced
- 1/4 teaspoon red pepper flakes
- 14 ounces chicken broth
- 1 pint heavy cream
- salt and pepper, to taste
Recipe
- 1 in 5qt dutch oven, saute diced bacon until crisp; about 8 minutes.
- 2 discard all but 2 t grease from pot.
- 3 add chopped onion and simmer until soft and translucent; about 7 minutes.
- 4 add corn kernels, garlic, red pepper flakes and cook, stirring occasionally until softened; about 15 minutes.
- 5 using food processor, blend corn mixture in batches untill smooth.
- 6 return corn mixture to pot; stir in chicken broth and simmer about 20 minutes.
- 7 stir in cream, adjust seasonings with salt and pepper.
- 8 simmer approximately 10 minutes.
- 9 ladle soup into warm bowls and garnish with bacon, if desired.
