Sweet Corn Soup

Ingredients

  • Servings: 4
  • 4 ears sweet corn, kernels cut off cobs
  • 8 ounces bacon, diced
  • 2 large yellow onions, chopped
  • 3 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes
  • 14 ounces chicken broth
  • 1 pint heavy cream
  • salt and pepper, to taste

Recipe

  • 1 in 5qt dutch oven, saute diced bacon until crisp; about 8 minutes.
  • 2 discard all but 2 t grease from pot.
  • 3 add chopped onion and simmer until soft and translucent; about 7 minutes.
  • 4 add corn kernels, garlic, red pepper flakes and cook, stirring occasionally until softened; about 15 minutes.
  • 5 using food processor, blend corn mixture in batches untill smooth.
  • 6 return corn mixture to pot; stir in chicken broth and simmer about 20 minutes.
  • 7 stir in cream, adjust seasonings with salt and pepper.
  • 8 simmer approximately 10 minutes.
  • 9 ladle soup into warm bowls and garnish with bacon, if desired.
