Two-tomato Soup With Barley

Ingredients

  • Servings: 4
  • 2 teaspoons olive oil
  • 2 cups sliced mushrooms
  • 1/2 cup chopped onion
  • 3 cups water
  • 2 tablespoons diced sun-dried tomatoes, packed without oil
  • 1 teaspoon brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon hot sauce
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon pepper
  • 1 (14 1/2 ounce) can no-salt-added whole tomatoes, undrained and chopped
  • 1/3 cup uncooked quick-cooking barley

Recipe

  • 1 heat oil in a large saucepan over medium-high heat. add mushrooms and onion, and sauté 4 minutes or until tender.
