Tomato Cream Soup With Basil And Gin

Ingredients

- 2 tablespoons olive oil
- 2 teaspoons garlic, chopped
- 4 tablespoons onions, chopped
- 1 tablespoon tomato paste
- 2 lbs tomatoes, peeled and seeds removed
- salt
- pepper
- 1 teaspoon basil leaves, chopped
- 4 tablespoons cream, whipping
- 4 tablespoons gin
- 2 tablespoons sour cream
- 8 fresh basil leaves
Recipe
- 1 peel and slice the tomatoes.
- 2 remove the seeds and slice into half-inch cubes.
- 3 saute onions and garlic in olive oil.
- 4 add the tomato paste.
- 5 add the tomatoes and chopped basil leaves.
- 6 bring to a boil and season with salt and pepper.
- 7 reduce heat and simmer for 10 minutes.
- 8 blend with a small hand blender.
- 9 stir in cream and gin.
- 10 pour into six soup dishes.
- 11 garnish with a spoon of sour cream and a basil leaf.
