Tomato Cream Soup With Basil And Gin

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 2 teaspoons garlic, chopped
  • 4 tablespoons onions, chopped
  • 1 tablespoon tomato paste
  • 2 lbs tomatoes, peeled and seeds removed
  • salt
  • pepper
  • 1 teaspoon basil leaves, chopped
  • 4 tablespoons cream, whipping
  • 4 tablespoons gin
  • 2 tablespoons sour cream
  • 8 fresh basil leaves

Recipe

  • 1 peel and slice the tomatoes.
  • 2 remove the seeds and slice into half-inch cubes.
  • 3 saute onions and garlic in olive oil.
  • 4 add the tomato paste.
  • 5 add the tomatoes and chopped basil leaves.
  • 6 bring to a boil and season with salt and pepper.
  • 7 reduce heat and simmer for 10 minutes.
  • 8 blend with a small hand blender.
  • 9 stir in cream and gin.
  • 10 pour into six soup dishes.
  • 11 garnish with a spoon of sour cream and a basil leaf.
