Tomato Bisque

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 medium onion, chopped
  • 1 large garlic clove, minced
  • 1 tablespoon butter
  • 32 ounces tomatoes
  • 1 bay leaf
  • 1 tablespoon sugar
  • 4 ounces cream cheese
  • 1 cup half-and-half
  • salt and pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh basil, minced

Recipe

  • 1 saute onion & garlic in the butter until soft.
  • 2 reserve about 1/2 c of the tomatoes &.
  • 3 add the rest of the tomatoes, bay leaf, & sugar to the pan.
  • 4 simmer for 10 min,.
  • 5 puree 1/2 c of tomatoes with cream cheese in a blender.
  • 6 mix the puree with the tomatoes in the pan after the 10 minute simmer.
  • 7 add the 1/2 & 1/2, then the lemon juice.
  • 8 season with salt & pepper to taste.
  • 9 garnish with fresh, minced basil.
