Tomato Bisque

Ingredients
- Servings: 4
- 1 medium onion, chopped
- 1 large garlic clove, minced
- 1 tablespoon butter
- 32 ounces tomatoes
- 1 bay leaf
- 1 tablespoon sugar
- 4 ounces cream cheese
- 1 cup half-and-half
- salt and pepper
- 1 teaspoon lemon juice
- 1 tablespoon fresh basil, minced
Recipe
- 1 saute onion & garlic in the butter until soft.
- 2 reserve about 1/2 c of the tomatoes &.
- 3 add the rest of the tomatoes, bay leaf, & sugar to the pan.
- 4 simmer for 10 min,.
- 5 puree 1/2 c of tomatoes with cream cheese in a blender.
- 6 mix the puree with the tomatoes in the pan after the 10 minute simmer.
- 7 add the 1/2 & 1/2, then the lemon juice.
- 8 season with salt & pepper to taste.
- 9 garnish with fresh, minced basil.
