Tomato Basil Soup

Ingredients

  • Servings: 8
  • 4 cups whole tomatoes or 4 cups crushed tomatoes
  • 4 cups tomato juice
  • 12 -14 fresh basil leaves (washed)
  • 1/2-1 pint heavy whipping cream
  • 1/2 cup butter
  • salt & pepper

Recipe

  • 1 puree whole tomatoes or crushed tomatoes in blender or food processor. i prefer to have a few timy pieces of tomatoes so that it isn't totally smooth.
  • 2 melt butter in a large pan.
  • 3 add tomatoes to pan leaving about 1 cup still in blender or food processor.
  • 4 place basil in blender or processor and blend to chop up basil.
  • 5 pour remaining tomatoes and basil into pot and add tomatoe juice.
  • 6 stir in cream and heat. do not boil.
  • 7 salt and peper to taste.
  • 8 can add non fat whipping cream in place of heavy cream and adjust amount of basil to taste.
