Tomato Basil Soup

Ingredients
- Servings: 8
- 4 cups whole tomatoes or 4 cups crushed tomatoes
- 4 cups tomato juice
- 12 -14 fresh basil leaves (washed)
- 1/2-1 pint heavy whipping cream
- 1/2 cup butter
- salt & pepper
Recipe
- 1 puree whole tomatoes or crushed tomatoes in blender or food processor. i prefer to have a few timy pieces of tomatoes so that it isn't totally smooth.
- 2 melt butter in a large pan.
- 3 add tomatoes to pan leaving about 1 cup still in blender or food processor.
- 4 place basil in blender or processor and blend to chop up basil.
- 5 pour remaining tomatoes and basil into pot and add tomatoe juice.
- 6 stir in cream and heat. do not boil.
- 7 salt and peper to taste.
- 8 can add non fat whipping cream in place of heavy cream and adjust amount of basil to taste.
