Tomato Basil Soup

Ingredients
- 4 cups canned tomatoes (i like to use 1 can of fire roasted tomatoes)
- 2 cups chicken broth
- 2 cups tomato juice (i like to use v8)
- 1/2 cup butter
- 1 cup heavy cream
- 10 -12 fresh basil leaves
- salt
- pepper
Recipe
- 1 combine tomatoes, broth, and tomato juice in a pot and cook on medium high heat for 30 minutes.
- 2 add the butter, cream, and basil leaves. add salt and pepper to taste.
- 3 use an immersion blender to get the soup to the consistency that you desire. if you do not have an immersion blender, you can use a regular blender and blend the soup in batches.
- 4 once soup is blended fix a yummy bowl for yourself! i like to add a little provolone cheese and croutons to my soup, but it is just delicious by itself! enjoy!
