Zuppa Di Gamberi (my Shrimp Soup)

Ingredients

  • Servings: 4
  • 1 teaspoon olive oil
  • 1 vidalia onion, small, chopped
  • 1 -2 garlic clove, minced
  • 1/2 lb shrimp, cleaned and peeled
  • 3 egg yolks
  • 1 cup half-and-half
  • 1/4 cup wine
  • 2 cups fish stock
  • old bay seasoning

Recipe

  • 1 in a large pot, sautee onion and garlic in olive oil until soft.
  • 2 add half of the shrimp, in a blender along with the egg yolks, cream, wine and fish stock. add the onions and garlic and puree all.
  • 3 add the mixture back to the pot and heat on low while stirring until the mixture thickens.
  • 4 add old bay to taste.
  • 5 add the other half of shrimp and heat until cooked through. (can also cook these in the oven for a few mintues then add to the soup when cooked.).
  • 6 season again to taste.
