Zuppa Di Gamberi (my Shrimp Soup)

Ingredients
- Servings: 4
- 1 teaspoon olive oil
- 1 vidalia onion, small, chopped
- 1 -2 garlic clove, minced
- 1/2 lb shrimp, cleaned and peeled
- 3 egg yolks
- 1 cup half-and-half
- 1/4 cup wine
- 2 cups fish stock
- old bay seasoning
Recipe
- 1 in a large pot, sautee onion and garlic in olive oil until soft.
- 2 add half of the shrimp, in a blender along with the egg yolks, cream, wine and fish stock. add the onions and garlic and puree all.
- 3 add the mixture back to the pot and heat on low while stirring until the mixture thickens.
- 4 add old bay to taste.
- 5 add the other half of shrimp and heat until cooked through. (can also cook these in the oven for a few mintues then add to the soup when cooked.).
- 6 season again to taste.
