Wild Rice Soup

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 1 tablespoon onion, minced
  • 1/4 lb mushroom, sliced
  • 1/2 lb diced ham or 1/2 lb chicken
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1/2 cup wild rice
  • 1/2 teaspoon salt
  • 1/3 cup grated carrot
  • 3 tablespoons slivered almonds
  • 1 cup half-and-half
  • 2 tablespoons dry sherry
  • minced parsley or chives

Recipe

  • 1 combine 1/2 cup wild rice and 2 cups water and cook.
  • 2 drain any excess water.
  • 3 melt butter in sauce pan.
  • 4 saute onions and mushrooms until tender.
  • 5 blend flour, gradually add broth.
  • 6 cook, stirring constantly until mixture thickens slightly.
  • 7 stir in cooked rice and salt.
  • 8 add ham or chicken, carrots and almonds, simmer about 5 minute
  • 9 blend in half-and-half and sherry.
  • 10 heat to serving temperature
  • 11 garnish with parsley or chives.
