Sweet Potato Vichyssoise

Ingredients
- Servings: 6
- 6 tablespoons butter
- 4 leeks, parts only
- 6 cups homemade chicken stock
- 1 1/2 cups dry wine
- 3 large sweet potatoes, peeled and chopped
- grated lime, juice and zest of
- 1 cup milk
- 1 cup whipping cream
- salt & fresh ground pepper
- fresh chives (to garnish)
Recipe
- 1 saute the leeks in the butter.
- 2 add stock, wine, and potatoes and heat to a boil.
- 3 turn down the heat and simmer for 15 minutes.
- 4 stir in zest, lime juice, milk, and cream.
- 5 season with salt and pepper.
- 6 puree in small batches.
- 7 refrigerate for 4-6 hours.
- 8 serve and garnish with chopped chives.
