Sweet Potato Vichyssoise

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 6 tablespoons butter
  • 4 leeks, parts only
  • 6 cups homemade chicken stock
  • 1 1/2 cups dry wine
  • 3 large sweet potatoes, peeled and chopped
  • grated lime, juice and zest of
  • 1 cup milk
  • 1 cup whipping cream
  • salt & fresh ground pepper
  • fresh chives (to garnish)

Recipe

  • 1 saute the leeks in the butter.
  • 2 add stock, wine, and potatoes and heat to a boil.
  • 3 turn down the heat and simmer for 15 minutes.
  • 4 stir in zest, lime juice, milk, and cream.
  • 5 season with salt and pepper.
  • 6 puree in small batches.
  • 7 refrigerate for 4-6 hours.
  • 8 serve and garnish with chopped chives.
