Sweet Potato & Chilli Soup

Ingredients
- Servings: 4
- 1/2 ounce butter
- 1 onion, roughly chopped
- 1 red chili pepper, finely chopped (or a pinch of chili flakes)
- 1 teaspoon ground coriander
- 2 garlic cloves, crushed
- 1 1/2 lbs sweet potatoes, peeled and cut into chunks
- 3 1/2 cups vegetable stock
- 3 ounces gruyere, grated
- 1 pinch paprika (optional)
Recipe
- 1 melt the butter in a large pan, add the onion, chili, coriander and garlic and cook for about 8 minutes until softened.
- 2 add the sweet potato and cook for a few more minutes.
- 3 add the stock, bring to the boil then simmer for about 10 minutes until the veg is soft.
- 4 mash, or blend if you want a smooth soup.
- 5 season and serve with a sprinkling of cheese and a pinch of paprika.
