Sweet Potato & Chilli Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/2 ounce butter
  • 1 onion, roughly chopped
  • 1 red chili pepper, finely chopped (or a pinch of chili flakes)
  • 1 teaspoon ground coriander
  • 2 garlic cloves, crushed
  • 1 1/2 lbs sweet potatoes, peeled and cut into chunks
  • 3 1/2 cups vegetable stock
  • 3 ounces gruyere, grated
  • 1 pinch paprika (optional)

Recipe

  • 1 melt the butter in a large pan, add the onion, chili, coriander and garlic and cook for about 8 minutes until softened.
  • 2 add the sweet potato and cook for a few more minutes.
  • 3 add the stock, bring to the boil then simmer for about 10 minutes until the veg is soft.
  • 4 mash, or blend if you want a smooth soup.
  • 5 season and serve with a sprinkling of cheese and a pinch of paprika.
