Summer Squash Dish

Ingredients

- 2 cups yellow squash
- 1 zucchini
- 1/2 lb mushroom
- 1 onion
- 2 tablespoons olive oil
- 2 cups cheese
- 10 3/4 ounces mushroom soup
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1 cup cracker
- 1 tablespoon butter
Recipe
- 1 thinly slice yellow squash and zucchin. wash and slice mushrooms. slice onion. in sauce pan add olive oil and saute all above. drain. combine vegetables , 2 cups grated cheese, 1 can mushroom soup, 1/2 cup sour cream and 1/2 teaspoon salt. grease a casserole and add all. crush crackers like ritz and mix in 1 tablespoon butter. put on top of vegetables. bake 25-30 minutes in 350 degree oven.
