Spicy Split Pea And Sausage Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 16
  • 4 cups dried split peas or 2 (16 ounce) packages split peas
  • 42 ounces low-fat sausage, sliced
  • 2 tablespoons olive oil
  • 2 carrots, diced
  • 2 onions, diced
  • 6 hot banana peppers, diced
  • 1 bulbs of garlic, pressed or 8 -10 garlic cloves
  • 1 bunch celery, sliced
  • 16 cups water
  • 4 bay leaves
  • 4 sprigs fresh thyme
  • salt, to taste
  • black pepper, to taste

Recipe

  • 1 saute sausage in olive oil til almost browned, add garlic and saute for a couple of minutes. remove and set aside.
  • 2 saute vegetables for 10 or 15 minutes.
  • 3 add water, spices, lentils, sausage and garlic. bring to a boil and simmer for 30 to 40 minutes or until lentils are tender.
  • 4 remove bay leaf and thyme.
  • 5 serve with crusty bread.
