Spicy Split Pea And Sausage Soup

Ingredients

- 4 cups dried split peas or 2 (16 ounce) packages split peas
- 42 ounces low-fat sausage, sliced
- 2 tablespoons olive oil
- 2 carrots, diced
- 2 onions, diced
- 6 hot banana peppers, diced
- 1 bulbs of garlic, pressed or 8 -10 garlic cloves
- 1 bunch celery, sliced
- 16 cups water
- 4 bay leaves
- 4 sprigs fresh thyme
- salt, to taste
- black pepper, to taste
Recipe
- 1 saute sausage in olive oil til almost browned, add garlic and saute for a couple of minutes. remove and set aside.
- 2 saute vegetables for 10 or 15 minutes.
- 3 add water, spices, lentils, sausage and garlic. bring to a boil and simmer for 30 to 40 minutes or until lentils are tender.
- 4 remove bay leaf and thyme.
- 5 serve with crusty bread.
