Spicy Roasted Red Pepper Soup

Ingredients
- 2 cups of chopped roasted red peppers (can use bottled)
- 2 onions, chopped
- 2 large potatoes, chopped
- 1/4 cup butter
- 4 -5 garlic cloves, chopped
- 5 cups chicken stock
- 2 (15 ounce) cans pears with juice
- 1/8 teaspoon cayenne pepper
Recipe
- 1 in a large pot saute garlic and onion in butter till tender. add potatoes, red peppers and broth. bring to boil. reduce heat, cover and simmer 15-20 minutes till veggies are tender. remove from heat. add pears, let cool.
- 2 in a blender, cover and puree in batches. return to pot, add cayenne and heat through. enjoy!
