Spicy Roasted Red Pepper Soup

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 2 cups of chopped roasted red peppers (can use bottled)
  • 2 onions, chopped
  • 2 large potatoes, chopped
  • 1/4 cup butter
  • 4 -5 garlic cloves, chopped
  • 5 cups chicken stock
  • 2 (15 ounce) cans pears with juice
  • 1/8 teaspoon cayenne pepper

Recipe

  • 1 in a large pot saute garlic and onion in butter till tender. add potatoes, red peppers and broth. bring to boil. reduce heat, cover and simmer 15-20 minutes till veggies are tender. remove from heat. add pears, let cool.
  • 2 in a blender, cover and puree in batches. return to pot, add cayenne and heat through. enjoy!
