Southwest Corn Chowder

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 6 slices bacon
  • 1/2 cup onion, chopped
  • 1 large potato, diced
  • 1/2 cup water
  • 1 (17 ounce) can creamed corn
  • 1 can condensed cream of mushroom soup
  • 2 ounces mushrooms, sliced
  • 2 cups milk
  • 1 teaspoon salt
  • 1 (4 ounce) can green chilies, chopped

Recipe

  • 1 cook the bacon until crisp.
  • 2 drain.
  • 3 reserve a few tbs.
  • 4 of bacon drippings.
  • 5 cook potato and onion in drippings until onion is slightly brown.
  • 6 add water and cover.
  • 7 simmer until the potato is tender.
  • 8 stir in the corn, soup, mushroom, milk and salt.
  • 9 heat to boiling.
  • 10 lower the temperature and add the chiles.
  • 11 simmer for a few minutes.
  • 12 serve with bacon crumbles on top.
