Yummy Chunky Chicken Soup With Vegetables

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 8 chicken legs, skin and fat removed
  • 4 large carrots, peeled with tips removed, cut into thirds
  • 4 potatoes, quartered
  • 3 small onions, tips and skin removed, quartered
  • 3 ears corn, husked, rinsed, and cut into 2 inch chunks
  • 1 cup brown rice
  • 1 chicken bouillon cube
  • 1 tablespoon sea salt
  • 2 teaspoons fresh ground pepper

Recipe

  • 1 fill a huge pot 2/3 full of water.
  • 2 toss in all ingredients.
  • 3 boil, then simmer for one hour.
  • 4 serve with whole wheat crackers or crusty bread.
  • 5 note: after 45 minute taste broth and add salt and pepper to taste.
