Tomato Bouillion Soup

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 1 onion, grated
  • 4 tablespoons butter
  • 1/4 cup sugar
  • 1 large fresh tomato, peeled, seeded and minced
  • 2 (64 ounce) cans tomato juice
  • 1/4 teaspoon fresh ground black pepper, to taste
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1/4 teaspoon salt, if desired

Recipe

  • 1 cook grated onion in butter in large stockpot until tender and translucent.
  • 2 add all remaining ingredients except salt.
  • 3 bring to gentle boil, reduce heat, and simmer one hour.
  • 4 taste for seasoning, adjust sugar, pepper and salt if needed.
  • 5 remove bay leaf before serving.
