Spicy Maple Pumpkin Soup

Ingredients

  • Servings: 8
  • 1/3 cup quinoa or 1/3 cup flour
  • 2 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon cayenne pepper
  • 2 (15 ounce) cans pumpkin puree
  • 5 cups chicken broth
  • 2 tablespoons maple syrup
  • 1 cup buttermilk

Recipe

  • 1 in a large pot, combine quinoa flakes, spices, pumpkin, broth and maple syrup. bring to a boil. reduce heat and simmer for 20 minutes.
  • 2 reduce heat to low and whisk in buttermilk. simmer for 5 minutes.
