Strawberry Gazpacho ( A Dessert!)

Ingredients
- 2 lbs fresh strawberries, washed & stemmed
- 1/4 onion, minced
- 1/4 red pepper, minced
- 1 cucumber, peeled, seeded and cubed
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- salt
- pepper
- 6 strawberries, whole
Recipe
- 1 place all the soup ingredients in a large glass bowl.
- 2 with clean hands, gently squeeze the ingredients and combine thoroughly. add salt and pepper to taste.
- 3 cover bowl tightly with plastic wrap and refrigerate overnight.
- 4 when ready to serve, pour cold mixture into a blender container and puree thoroughly. this may have to be done in batches.
- 5 serve in pretty glass cups and garnish rim with a whole strawberry.
