Strawberry Gazpacho ( A Dessert!)

Ingredients

  • 2 lbs fresh strawberries, washed & stemmed
  • 1/4 onion, minced
  • 1/4 red pepper, minced
  • 1 cucumber, peeled, seeded and cubed
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • salt
  • pepper
  • 6 strawberries, whole

Recipe

  • 1 place all the soup ingredients in a large glass bowl.
  • 2 with clean hands, gently squeeze the ingredients and combine thoroughly. add salt and pepper to taste.
  • 3 cover bowl tightly with plastic wrap and refrigerate overnight.
  • 4 when ready to serve, pour cold mixture into a blender container and puree thoroughly. this may have to be done in batches.
  • 5 serve in pretty glass cups and garnish rim with a whole strawberry.
