Southwest Chicken Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 onion, diced
  • 1 red pepper, seeded and diced
  • 1 jalapeno, seeded and diced
  • 1 tablespoon vegetable oil
  • 15 ounces hominy
  • 15 ounces kidney beans
  • 15 ounces black beans
  • 16 ounces salsa (chunky)
  • 32 ounces chicken broth
  • 2 cups cooked chicken, shredded
  • 1/4 cup cilantro, chopped
  • sour cream (to garnish)

Recipe

  • 1 in a pot over medium heat, saute onion, pepper and jalapeno in oil until soft, about 7 minutes.
  • 2 add hominy, beans, salsa and chicken broth. bring to a boil, reduce heat and stir in chicken. cover and cook 5 to 10 minutes more until heated through. stir in cilantro. serve with more cilantro and sour cream if desired.
